Ingredients:
- For the filling:
- 2 medium-sized potatoes, boiled and mashed
- 1/2 onion, finely chopped
- 1 green chilli, finely chopped (according to your taste)
- 1/2 tsp ginger-garlic paste (or finely chopped)
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp coriander powder
- 1/4 tsp garam masala
- 1/2 tsp dry mango powder (or 1 tsp lemon juice)
- Salt to taste
- 1 tbsp oil or ghee
- Finely chopped coriander leaves
For the sandwich:
• 4 bread slices (you can use any bread of your choice)
• Butter or oil (to grill the sandwich)
• Green chutney (mint and coriander)
• Tomato ketchup (optional)
• Finely chopped onion (optional)
• Tomato slices (optional)
• Grated cheese (optional)
Making process-
1. Prepare the potato masala:
- Heat oil in a pan.
- Add finely chopped onion and green chillies and fry till light golden.
- Add ginger-garlic paste and fry till the raw smell goes away.
- Now add turmeric powder, red chili powder, coriander powder and garam masala. Fry on low flame for 10-15 seconds so that the spices do not burn.
- Add boiled and mashed potatoes, dry mango powder and salt and mix well.
- Cook for 2-3 minutes so that all the spices mix with the potatoes.
- Turn off the gas and add chopped coriander and mix. Let the spices cool down.
2. Make a sandwich:
- Take two bread slices. Apply green chutney on one slice.
- Apply some tomato ketchup (if using) on the other slice.
- On the chutney bread, spread the prepared potato masala evenly.
- If you want, you can add onion slices, tomato slices and cheese on top of it.
- Cover it with another bread slice.
- Apply some butter or oil on the outside of the sandwich.
3. Grill the Sandwich:
- Heat a grill pan, tawa, or sandwich maker.
- Place the buttered side down.
- Apply some more butter on top.
- Grill the sandwich on both sides until it is golden brown and crispy. Grilling on a grill pan will give it nice grill lines.
- If you are using a tawa, press and cook it on medium flame.
4. Serve:
• Cut the hot potato grilled sandwich in triangle shape from the middle.
• Serve it immediately with green chutney and tomato ketchup.
